Chicken Cacciatore

Preparation Time: 25 minutes

6 chicken thighs, boneless and skinless

2 T. olive or vegetable oil

¼ cup onion, diced

¼ cup red bell pepper, diced

1 small carrot, peeled and shredded

2 cloves garlic, minced

2 (15 oz.) cans tomato sauce

1 bay leaf

1 tsp. basil

1 tsp. oregano

Salt and pepper to taste

3 cups hot cooked whole wheat pasta or any amount of zoodles (see recipe on page 134)

Parmesan cheese, shredded for garnish

In a large cast-iron Dutch oven or heavy pot, brown the chicken in the oil. Move to the sides of the pot. Add the onion, bell pepper, carrot, and garlic in the center of the pot and sauté for several minutes, allowing the vegetables to heat up and begin to release their fragrance. Add the remaining ingredients except for the pasta and cheese. Turn down the heat to keep it barely simmering and cook the cacciatore for about 30 minutes or until the chicken is thoroughly cooked.

When ready to serve, discard the bay leaf and ladle one piece of chicken and some of the sauce onto the prepared pasta. Serve with Parmesan to sprinkle on top as desired.
